Aunt Rose’s Hamburger Noodle

This has been one of my favorite dishes since I was a teenager. I made it last night and have never seen Lucy eat so well at dinner! Thought I’d share this one for you. It’s an easy comfort food dish.

Aunt Rose’s Hamburger Noodle Casserole

3/4 bag egg noddles
1 pound ground beef
1 onion
1 can Golden Mushroom Soup
1 can Cream of Mushroom Soup
1 cup of water
6 slices of American Cheese

Optional – add in some celery (I don’t like celery) and/or sliced mushrooms if you want extra.

While the noodles cook, brown hamburger in skillet, saute the onion and celery in butter. Mix together and add soup – rinse each can with 1/2 cup water. Bring to a simmer and add noodles. Pour half into buttered casserole dish and top with half the cheese then top with remainder of casserole and cheese. Bake for 20 minutes at 325 degrees. Serve warm.

You could make this ahead and not bake it. After you fridgerate it, bake it until warm, 20-30 minutes.
