1. We had a great trip to NC. Even with the rain we managed to have lots of fun. Here is a shot from our one afternoon outdoors. I promise a follow up post on my travels with two.

2. Jack is full of tricks. He’s a rolling machine and he makes all kinds of happy fun noises. How is it he is five months this week?
3. I am now in love with the Everyday Food publication. It’s got some great ideas for meals. Hopefully it will inspire me to do better with meal plans.
4. There have been some glimpses of nice weather coming and I really can’t wait for the playground days to be here for a while. There is nothing like a little sunshine and fresh air to pick up your mood.
5. I’m tired.
6. Lucy continues to say the funniest things. While on her way to her “date” with Uncle Kenny, she proclaimed, “He’s not a boy, he’s an Uncle Kenny!” So darn cute!

8. We had the kids pictrues done for Easter/3 years old and 6 months. So what if he’s only 5 months and she won’t be 3 until May? I need to scan them and then I’ll share.
9. There is a long list of things to do around the house when the weather gets nice. Most of it is paint related and since we have been here 4.5 years, I’m itching to change some colors on the walls. Especially if we are stuck here forever like it seems we may be. At least we can make the most of it. I’d like my bedroom or living room to be Asparagus.
10. I was thinking about happiness when I was blow drying my hair this morning and wondered what people’s first response would be if you asked them on a scale of 1-10 how happy they were. I immediately thought I’d answer 9. How happy are you?
This has been one of my favorite dishes since I was a teenager. I made it last night and have never seen Lucy eat so well at dinner! Thought I’d share this one for you. It’s an easy comfort food dish.
Aunt Rose’s Hamburger Noodle Casserole
3/4 bag egg noddles
1 pound ground beef
1 onion
Butter
1 can Golden Mushroom Soup
1 can Cream of Mushroom Soup
1 cup of water
6 slices of American Cheese
Optional – add in some celery (I don’t like celery) and/or sliced mushrooms if you want extra.
While the noodles cook, brown hamburger in skillet, saute the onion and celery in butter. Mix together and add soup – rinse each can with 1/2 cup water. Bring to a simmer and add noodles. Pour half into buttered casserole dish and top with half the cheese then top with remainder of casserole and cheese. Bake for 20 minutes at 325 degrees. Serve warm.
You could make this ahead and not bake it. After you fridgerate it, bake it until warm, 20-30 minutes.

Happy St. Patrick’s Day! Here’s my little Irishman.
We had pulled pork sandwiches and homemade mac-and-cheese for dinner this weekend. Get out your crockpot and get cooking.
Ingredients:
3 lbs. boneless pork roast
1 pkg. McCormick® Slow Cookers BBQ Pulled Pork Seasoning
1/2 cup ketchup
1/2 cup firmly packed brown sugar
1/2 cup cider vinegar
1 cup of BBQ sauce (save this until the end)
– Put pork in crockpot. Mix Seasoning, ketchup, brown sugar, and vinegar until blended. Pour over pork. Cover.
- Cook 8-9 hours on LOW or 4-5 hours on HIGH.
- Shred pork using two forks and mix with the BBQ sauce (I did this right in the slow cooker and then let it warm for a bit with the sauce.)
- Serve on your favorite warmed buns
There are many easy sides for this – Mac-and-cheese, corn on the cobb, baked beans, potato salad….
