Happy Birthday to the world’s best husband, daddy and friend! Today is Tommy’s 30th Bday. Hope it’s the start to a great year for him. He truly is such a wonderful devoted man. Lucy and I treasure all our moments with him. We want him to know how much he is loved!
I go through phases where I get inspired to plan out our meals. Sometimes it is tough when we get busy and/or Tom has softball games during the week. There have been a few instances recently where I got adventurous to make something new and it turned out great. I thought I’d share a new recipe I concocted.
Carne Asada Tacos
Marinate a piece of flank steak in the following mixture:
1/3 cup olive oil
1 orange – juiced
2 limes – juiced
fresh ground pepper
1 tsp garlic powder
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp paprika
Cook in a grill pan for 4-5 minutes per side, let it stand before cutting. Serve with your favorite taco toppings. We like shredded cheese, soft wheat tortillas, tomato, salsa, and sour cream. Be sure to whip up some guacamole with an avocado, red onion, garlic powder, diced tomato and lime juice. Enjoy!
